ingredients
- 2 lbs hash browns, frozen
- 1⁄4 cup butter, melted
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄4 cup onion, chopped
- 2 cups sour cream
- 1 (10 3/4 ounce) can cream of mushroom soup
- 2 cups cheddar cheese, shredded

Topping
- 2 cups corn flakes, crushed
- 1⁄4 cup butter, melted

directions
- Preheat oven to 350 degrees.
- Mix all ingredients (except toppings) together in large bowl.
- Pour into buttered 9x13 pan.
- Cover top of potatoes with the crushed cornflakes.
- Drizzle melted butter over cornflakes.
- Bake uncovered 45 minutes.

I am famous for this casserole and it is DEMANDED of me at gatherings. Following it to the letter (I use Kellogg's crumbs instead of mashing up the cornflakes myself) will produce mouth watering results. Also, another fun thing is that you can change around which soup that you put in it to alter the flavor. I like it with cream of broccoli, a mix of cream of chicken and cream of mushroom, I've mixed cheese soup and cream of potato, I've tried cream of onion....you can really play around with it. I like using two cans sometimes as well. It's truly my favorite dish in the world to eat!

I strongly recommend sweating/sauteing the onions prior to mixing in - otherwise they have a rather strong, raw taste. Other than that, perfect! Will finish the leftovers tonight!

This is such a hearty casserole! Great as a side dish or even for breakfast or brunch. I loved how easy it was to make and it was so good!

Been making my version for years. Cr of Celery, instead of mushroom & add an 8 oz container of onion dip! And the next day is even beter, if there’s any leftover.

My husband made this as a side to pork chops on one of our first dates 22 years ago. It is known in our inner circle as "Drew's Potatoes". He uses cream of chicken soup instead of cream of mushroom. It's his standard pot luck dish - and the only dish he's willing to make that has more than two ingredients, it's that easy and delish. Can't go wrong with these potatoes!

I would like to tweak the name to Grandma Tingley's or Louise's hash brown casserole . My grandma made this for almost every get together, even Thanksgiving when we all want mashed potatoes, I think we got those too, she had a huge mess in her kitchen that's how you knew it was a holiday, the mess and the smells and her finding time to come and ask each one of us how we were doing. I miss that lady soooooo very much. Anyway the casserole is very very good. Try it who knows it might end up being one of those food items that your kids and grand-kids remember you making and therefore the memories of family time that often happens far less often once the patriarch dies. Sadly.

<p><span><strong>I am a stay at home mom to two wonderful boys; Joshua (8years), Kaiden (5 years), and baby GIRL, Madalynn (19 months)! I also have two fur babies (cats); Kobee, AJ; we had to put our youngest cat Sly down Jan 2014. :(. I am also married to my best friend, Jeff and have been since April 2005. I love cooking, hate cleaning and will do whatever I can to get out of it! I love grilling and baking. I do most of the grilling at my house, and bake for almost a week straight at Christmas time! I can make or will attempt just about anything, though I rarely make brownies, my husband's are the best! Homemade breads are not my friend, so I am always working on bread baking.</strong></span></p><p><span><strong>As for recipe ideas (besides zaar) Cooking Light Cookbooks are my favorites. I love to make new meals and try new things; it is hard though because my husband is picky when it comes to veggies (and hates seafood); If it were up to him we would have baked-bread crumb chicken and white rice at least one meal a day! Over the past couple years with zaar, I have found tons of new recipes my family normally wouldn’t eat but have been happily surprised with new favorites.</strong></span></p><p><span><strong>I love to join in all of the tag games; I haven't been as present as I would like, but as soon as my Jeff is back from working in Ohio I will be back in full tagging mode! </strong></span></p><p><span><strong>Cooking is my hobby and passion, I always like to host the family get togethers and volunteer for the potluck dishes. Most of all though are my kids; being home all day with them is fun and challenging, but I wouldn’t trade it for any salary!!</strong></span></p>
