Easy Greek Cucumber Salad Recipe (2)
  • Lettuce: You can use any lettuce, such as Romaine, Iceberg, Arugala, or Butter lettuce. If you don't want to use lettuce, skip it and just use the other ingredients.
  • Cucumbers: Long English cucumber is my favorite for this salad, but you can use any cucumber.
  • Tomatoes: I used cherry tomatoes, but you can use grape tomatoes, Roma tomatoes, or any large tomatoes.
  • Red onion: You can use green, white, or yellow onions as well.
  • Kalamata olives: You can use black olives or green olives instead. I like to buy my Kalamata olives already pitted to make it even easier to make this classic Greek salad.
  • Feta cheese: You can even use goat cheese, blue cheese, or parmesan cheese.
  • Extra virgin olive oil: You can also use any oil, such as avocado or grapeseed.
  • Fresh lemon juice: You can use lime juice instead of lemon juice if you prefer.
  • Garlic: I used fresh garlic or ½ teaspoon of garlic powder instead. If you don't like garlic, skip it.
  • Dried oregano: I used dried oregano, but you could use fresh oregano. You can also use dried or fresh herbs like basil or thyme.

Notes

Nutritional information is approximate and is meant as a guideline only.

Expert Tips:

  • Choose ripe, juicy tomatoes: The quality of your tomatoes can make or break the salad. Look for vine-ripened tomatoes that are firm but give slightly when gently squeezed. The fresher, the better!
  • Use a good quality feta cheese: Feta cheese is an essential ingredient in Greek salad, so it's worth investing in a good quality one. For best results, look for feta that is made with sheep's milk and is sitting in a brine.
  • Don't skip the marinating step: Allowing the salad to marinate in the dressing for at least 30 minutes helps the flavors meld together.
  • Slice the vegetables evenly: When slicing the cucumbers and tomatoes, try to cut them into small, bite-sized pieces. This will help ensure each bite has a balanced combination of flavors.
  • Adjust seasoning to taste: While this recipe includes specific measurements for the dressing and seasoning, you should feel free to adjust them to your own taste. If you like more tang, add more lemon juice. If you prefer less salt, use less. Don't be afraid to experiment!
  • Add other ingredients: If you want to mix things up, you can add other ingredients to your Greek cucumber salad, such as green pepper, avocado, radishes, or chickpeas.
  • Serve cold: Greek cucumber salad is best served chilled, so keep it in the fridge until you're ready to serve. You can also place the bowl inside a larger bowl filled with ice to help keep it cool if you're serving it outdoors on a hot summer day.
